The main thing to remember is that the only way we can know anything about ourselves or our world, is through information. All other approaches are ultimately flawed by definition.
The only way we know anything about the world, is by using our senses to gather information from it. Then our brains process all this incoming data and create internal models of reality.
We are definitely not conscious of all the incoming data, some of which is discarded as irrelevant and some of which we consciously choose to ignore. We often do this in order to make our brains more efficient.
For instance, we don't consciously take in the data on a bright sunny day, that there is not even one shadow anywhere. We typically just see everything as bathed in light and shade.
So this means our brains are constantly filling in missing data, and it is not possible to know what we are really seeing. It works very well for most of the time but sometimes reality can be deceiving.
Another example is when you have a heated argument with a loved one, and they say something that makes no logical sense to you.
